* 1 cup vegetable oil
* 3 eggs
* 1 ¼ cups granulated white sugar
* 1 teaspoon vanilla extract
* 3 cups all-purpose flour
* 1 teaspoon baking soda
* 1 teaspoon salt
* 1/2 tsp baking powder
* 2 cups finely grated fresh zucchini
Pecan Praline Topping
* 1 ½ cups of chopped pecan pieces (measure pecans before chopping)
* 1 cup firmly packed brown sugar
* ¼ cup all-purpose flour
* ¼ cup butter, melted
Preheat the oven to 350 degrees
Combine eggs, oil, sugar, and vanilla
In a separate bowl combine baking soda, baking powder, and salt
Gently add the dry ingredients into the wet ingredients
Fold in Zucchini last (the batter will be thick)
The batter will make two loaves
Prepare two loaf pans using Bakers Joy or or other non-stick baking spray
Transfer batter into pans evenly
Prepare Praline Topping
Combine chopped pecans with flour and brown sugar and melted butter and sprinkle between the two pans.
Bake for 45 to 50 minutes
Conduct a toothpick test and if the comes out clean to ensure the loaf is done
